It was actually our first pick as it affords excellent training.  Thank you all for your love and support.  We are very excited about this opportunity.  The residency program is 3 years long.

Red Enchiladas

This is one of our favorite family recipes. I got this recipe from my wonderful sister-in-law Becky.

2 chicken breasts cooked and cubed
1 can chili con carne/no beans (we use chili with beans)
1/2 pound Monterey jack cheese, shredded
1 can Enchilada sauce (Rosarita is the best)
sprinkling of onion powder 
8-10 flour tortillas

Cook chicken and dice. Assemble enchiladas by putting chicken onion powder and cheese inside. I first mix these up in a bowl together to make it easier. Roll up tortillas and put in a 9x13 inch pan. Pour enchilada sauce and chili all over the top of the tortillas. Bake at 350 degrees for about 25-30 minutes. 

These are yummy with a dollop of sour cream on top or to make it restaurant style you could put some shredded lettuce and chopped tomatoes on top.

Ranking today

So today I (Ryan) ranked my programs for residency.  I only ranked four programs which may have been a bit of a gamble but they are the only 4 that I interviewed at that I am remotely interested in.  So now we hurry and wait for March 8th when the Match happens. In no particular order the Ranking is:

Intermountain Medical Center in Murray, UT
Truman Medical Center in Kansas City, MO
Mineral Area Regional Medical Center in Farmington, MO

I love this stage in life. I love that my kids are all old enough that we could play outside for an hour in the snow. I know it seems silly but I have looked forward to this for a long time! Don't get me wrong. I LOVE babies and enjoyed all the blessings of having a little one in the house, but I just truly feel ready for this stage in my life. It feels good!



Ryan has been making the kids into burritos and they love it.

To My Valentine


How do I love thee, let me count the ways...

- You are truly my best friend, I love to hang out with you. If there was a way we could hang out together all day every day and make ends meet, I would be in  complete  heaven.

- I Love how you call me gorgeous, even though I don't feel I am usually.

- I Love these flowers you sent me even though you are laid up at the hospital! What a surprise!

- I Love what a wonderful Dad you are and that the kids can't wait for you to come home because it is always more fun when Dad is home.

Did any of you watch The Music Man growing up? I loved that movie. One of my favorite scenes in the movie is when the whole town lines up on the side of the road because they see the Wells Fargo man coming and they all are hoping for a package. 

Whenever I see the UPS truck coming down my street I start to sing the song from the movie in my head.

Well today he did come to our house! And this is what he brought us...

If you don't remember my last ode to Rosarita enchilada sauce post, this stuff is the best! You can only get it out West and we definitely go through withdrawals being out here near the East. I have tried to make my recipes with other, "lesser than" enchilada sauce brands and my kids won't even touch the food. Little to say we are SO EXCITED!
